Clutch

A clutch "gradually gets hold of" the power from the engine.  You need it to start moving, because the car is heavy and the engine's surprisingly weak.  Try to move the car too fast and the engine will stall.  (An "automatic" car balances these for you).

A SECOND use is to safely stop.  Its THIRD use is to change gear.  Its FOURTH use is for "clutch control", so you can creep out at junctions where it's hard to see if it's safe to go.  (An automatic will do most of these for you, perhaps all).
